  New Life

It is always a treat to me to see a new born life. Unless, infact it was something a termite or some other pest like that. It reminds of the natual cycle that God has created. Little Bear was the male goat born on our farm last year, and this year Katie-Do had his kids. Three healthy, vocal little babies. It is Katie's first time kidding. It was quite an experience. Like every year, I am so excited but at the  same time stressed. Those first few hours a so important to the health of a goat. Spring is on the way, and I welcoming it along with all the new life.

Old fashioned corn…

Something our ancestors knew, something we should know. In a pinch when food gets scarce corn will come through in a pinch. Dried corn is one of the most easily stored foods, plus it provides much needed nutrients as a supplement to your “stocked” foods. I take dried organic Non genetically altered corn and store it in 5 gallon buckets. I use it through out the year to supplement our meals. I takes dried corn soak it in lime water ( that is water with pickling lime), then dry it again. Next I grind it in my grain grinder. Making a course cornmeal. Then I place in sort of container or freezer bag. I use it make many old -fashioned recipes for meals or to supplement our meals. I am posting some of my recipes. I hope you enjoy…

 

Corn bread ( if I have sour milk)

2 C cornmeal

¼ t soda

2t baking powder

1t salt

2 eggs Beaten

2 C sour milk

2 T melted fat or oil ( I use coconut oil)

Sift dry ingredients. Add eggs to milk and stir into dry ing. Added melted fat. Pour into a hot greased pan about 8 inches square, and bake at 425* 20 to 30 minutes. Makes 6 servings

* great recipes if you have sour milk you want to use up.

Sweet cornbread

¾ cup sugar (I use Rapadura sugar)

2 eggs

1 C cornmeal

1 C flour

1 t soda

2 t aluminum free baking powder

2 T coconut oil, olive, butter, or lard

1 cup sweet milk

½ t salt

Mix all dry ing. , milk eggs , add oil last. Bake at 450* for 25 to 30 minutes. This makes an 8-inch square panful or 9 servings

Corn meal mush ( A family favorite here at the McKeown household)

4 C water

3 C cornmeal

1 t salt

Bring hot water to a hot boil and take meal and just add a small amount at a time and stir all the time until the mush becomes thick . Remove pan into a glass loaf pan. I usually make this the night before and stick in the fridge to cool overnight. Then in the morning slice like scrapple. Fry in heavy skillet with your choice of fat or oil.

 

These are just a small sample of what you can do with corn. Hey, and corns not that hard to grow provided we don’t have a drought. The time is now to start learning the ways of our ancestors . I suggest reading and studying, and talking with older family or friends to see how they did things in the “olden days” we may need there wisdom.

Those Middle School Lockers...

As time goes on , I feel the problems of the past seems to get smaller. Sure, I remember them, and many still have a little sting, they remind me of those old middle school lockers… Like for instance, do you remember when you left elementary school and went to middle school ? I was amazed at how large the building was, and those lockers were huge. When I left middle school, and went to high school I came back to middle school to visit my brother, and I could not believe how small everything was, especially the lockers. After leaving high school, I often returned for school functions for my younger brothers only to find the same thing, that the lockers in that school were so small. Now, I have been the same height since about 8th grade. ( Notice I did not say weight! ) If its not me growing taller than what is it?

When we go through life we are faced with many trials, troubles, overwhelming odds, as some would call it. For me it was the new big school, all those classes, and especially those lockers. These things seem so big, and powerful for a time. When they pass, they seem to get smaller, and as we look back, things that seemed so large were not really that big at all.

 

One battle, and one victory, makes the next battle seem a little easier to take. As we journey on, we are faced with small ones , and some not so small. Sometimes they seem larger than this earth itself. These are the ones that we have to stop and think, someday this problem is going to look as small as those lockers did the first time I went back to middle school. So, the next time we are faced with overwhelming odds as some say, think of those lockers.

               INFLATION , FOOD, AND FRANTIC                    

Inflation , food, and frantic… If I could think of 3 words to go together today it would be those. I have began to research for an article I am writing “ food shortages coming to a grocery store near you.” It has been grueling work. My time is limited so in between home schooling, cooking, studying naturopathy, campaigning for Ron Paul, trying to read my Bible, being a wife, and about a thousand other things, I am working on this article. As time will allow I am starting to dive into this, reading article after article of a possible food shortage in our country not fully understanding the big picture. Talking with local farmers, and other food buying club individuals, I continue to run across this statement “ before the shortage the price of food will rise.” Well, I have heard this was coming, and I have seen a slight jump in food, but nothing to write home about. We usually buy in bulk, and raise most of our food, so I am not so effected , or so I thought.

I have an Organic/ natural food co-op. We order every 4-8 weeks depending upon how many we have ordering. Today was my ordering day, so I thought I will order extra, because I always like to stock up .

We are into the preparedness lifestyle, so it is nothing out of ordinary for me to do so. Well, as it just so happens I called the company in which I order from, she proceeds to take my order. Let’s just say that I did not get no where near as much stuff as I wanted to get. In the last 4-6 weeks prices on some things have doubled. I could not believe what I was hearing. Now, I have heard many on the shortwave radio talk of these things but I have never seen it so in your face as I have today. The girl who took my order was not surprised that I felt that way, apparently she is dealing with this on regular basis now(probably every call). Others are probably just as flustered as I was hearing those prices. She did inform me that this is nothing, everything is going up, especially the grains. “ They are going up, and they won’t be going back down any time soon.“ Which brings me back to the comment that I have been hearing as I have been researching my article “before the shortage the price of food will rise.” Are we seeing the build up before the storm or is it just inflation?

They call us what?

A parent’s prayer...

These two little ones, oh how they are growing. I pray that over time, healthy seeds we are sowing. As life passes, we have no way of knowing, exactly what direction there lives will end up going.

God gives them the choice of who the'll live for someday. Oh,  how we hope, that they will choose the narrow way. We are awaitng that time, when we here them say," It's Jesus whom I love and want to serve each and every day...
